Disclosed is a method and system (1) for processing meat trim products to provide a higher degree of accuracy of fat percentage categorisation of trim products. The method comprises supplying a sequence of collections of trim (COTs) (2). Each COT (2) comprises a plurality of trim products. A fat/meat relationship for a COT (2) is measured using x-ray radiation and detection means. The COT (2) is transferred to a selected station (24) by a separator (20) controlled by a controller (50). A batch is completed at the selected station (24) if the total fat/meat relationship fulfils a predetermined criterion. Measured and/or calculated data related to the fat/meat relationship is required for a batch to be completed. The data is fed back to a trim source which supplies COT (2). On receiving data feedback, the trim source will supply one or more COTs (2) with appropriate fat/meat relationship for the batch to be completed. The weight of each collection of trim is also measured and supplied to the controller. |
