FIELD: food industry.SUBSTANCE: invention relates to production process for kvass beverage. Recipe components are prepared. Clary is extracted with liquid carbon dioxide to separate corresponding miscella. Girasol-sunflower is cut, dried in microwave field to a residual moisture content of about 20 % at microwave field power providing heating inside girasol-sunflower pieces to a temperature of 80-90 °C for at least 1 hour, roasting, impregnation with separated miscella while increasing pressure, reducing pressure to atmospheric pressure value with simultaneous freezing of girasol-sunflower, crushing and mashing together with kvass bread and hot water and settling three times with separation of liquid phase from pulp to obtain kvass wort. Thereto was added 25 % formula amount of sugar as a white syrup mixture is fermented with pure cultures of yeast kvass race M and lactobacilli races 11 and 13, blended with remainder of sugar syrup as a white and dispensed.EFFECT: invention allows to reduce duration of process and increase foam stability of end product.1 cl |
