摘要 PROBLEM TO BE SOLVED: To provide a method for producing a yogurt-like lactic acid fermentation drink derived from starch that stably produces one not only excellent in appearance and flavor but also excellent in antibacterial properties.SOLUTION: The method for producing a yogurt-like drink derived from starch is performed by a method which includes (I) a liquefaction step of starch, (II) a sterilization step, (III) a saccharification step and (IV) a lactic acid fermentation step. The step (I) is a step of preparing a mixture including hot water, starch and a liquefying enzyme to liquefy the starch by a liquefying enzyme. The step (II) is a step of sterilizing the mixture in which part of the starch is liquefied by heating, which is carried out in the middle of or after the step (I). The step (III) is a step of producing glucose and/or maltose by a diastatic enzyme, which is carried out at the same time with the step (I) or after the step (I) and before or after the step (II). The step (IV) is a step of adding Lactobacillus paracasei as a lactic acid bacterium to a saccharified liquid to carry out a lactic acid fermentation.SELECTED DRAWING: None
