PROBLEM TO BE SOLVED: To provide a modified curdlan polysaccharide thickener having improved gel strength and/or water retentivity, which, when curdlan is used as a polysaccharide thickener in the preparation of the foods and drinks, drugs, cosmetics, building materials or the like, can produce a preparation excellent in dispersibility and stability, even if the foods and drinks, drugs, cosmetics, building materials or the like are in a liquid state.SOLUTION: A polysaccharide thickener comprising curdlan is prepared so that its alkali dissolution viscosity is 45-150 mPa s when measured by an alkali dissolution viscosity measurement method using a B-type viscometer, which is defined as an alkali dissolution viscosity measurement method (1), to provide a modified curdlan polysaccharide thickener having improved gel strength and/or water retentivity. The curdlan provides a modified curdlan polysaccharide thickener having improved gel strength and/or water retentivity and capable of producing a preparation excellent in dispersibility and stability even in a liquid state.SELECTED DRAWING: None |
