PROBLEM TO BE SOLVED: To provide a method for producing an instant fry noodle which improves an increase of a fat content when high-density fry noodle mass is produced that is a problem of a technique for producing an instant fry noodle for producing a fry noodle mass using a fry retainer with an air gap between a gap portion of a retainer body and a gap portion of a retainer lid, is excellent in a fry efficiency even when a noodle mass density is high, and has reduced the fat content.SOLUTION: A method for producing an instant fry noodle for producing a fry noodle mass using a fry retainer with an air gap between a gap portion of a retainer body and a gap portion of a retainer lid includes: a pressurized air injection step of injecting pressurized air from a lower direction to an upper direction of the retainer body, and floating a noodle line, during a period from the time when the noodle is charged to a cup-like container to the time when a fry process is started.SELECTED DRAWING: Figure 4 |
