<P>PROBLEM TO BE SOLVED: To provide a production method of a compact noodle cluster by devising an appropriate leveling means without ruining the cookability as a frozen noodle cluster product. <P>SOLUTION: The production method of the compact noodle cluster includes the steps of: (1) dropping a noodle cluster composed of a constant amount of cooked noodles to put in a tray for forming a noodle cluster in water; (2) leveling the noodle cluster in the tray in the water by using a vibration means or a raking means and/or a water stream; and (3) freezing the leveled noodle cluster in the tray to obtain a frozen noodle cluster. <P>COPYRIGHT: (C)2013,JPO&INPIT |
