The present invention relates to a method of producing an extracted Grifola frondosa fermentation product, which cultures edible fungi firstly in a solid state of dried Grifola frondosa to enhance bio-availability of a Grifola frondosa fruit body before extracting the same with water, and inoculates lactic acid complex strains to the extract to secondly culture the same in a liquid state before performing concentration, drying and powdering to obtain the extracted Grifola frondosa fermentation product having enhanced anticancer immune activities. The Grifola frondosa fruit body fermentation product, according to the present invention, has improved bio-availability and anticancer immune activities as the fermentation product is produced through a two-phase fermentation process including the first solid fermentation and the second liquid fermentation. Thus, the Grifola frondosa fruit body fermentation product can be used as an ingredient for regular food, health supplements, medicines, etc. The Grifola frondosa fruit body fermentation product can be used effectively to maintain the freshness and improve nutrients of fermented food, and be used as a material for functional cosmetics since the molecular weight of the active ingredients is lowered. |
