摘要 The present invention relates to a method for preparing anglerfish jerky. More specifically, the method for preparing anglerfish jerky comprises: a preparation step of preparing seasoned and dried anglerfish jerky; a pre-heating step of increasing the inner temperature of an electric hot plate up to 200-240°C; an arrangement step of arranging the dried anglerfish jerky on a wire mesh having preferable air ventilation; a compression and heating step of vertically applying pressure to the anglerfish jerky arranged on the wire mesh after heating the same on the electric hot plate for 47-60 seconds; a cooling step of cooling the compressed and heated anglerfish jerky; a preparation step of forming the cooled anglerfish jerky in a state which is easy to be torn by passing the cooled anglerfish jerky through a cut and roll machine; a finishing step that a worker tears the cut anglerfish jerky by using hands; and a packing step of packing the torn anglerfish jerky after the finishing step. Accordingly, the method for preparing anglerfish jerky: offers a unique flavor to the anglerfish jerky while maintaining the harmony with the flavor of anglerfish; and provides excellent shape stability, storage stability, and shelf-stability to the anglerfish jerky.
