The present invention relates to a method for reducing Bacillus cereus spores contained in Korean fermented sauces by germinating the same, and the Korean fermented sauces prepared thereby. The method comprises a step of heating the Korean fermented sauces containing Bacillus cereus spores to the temperature of 30-90°C, and then adding inosine monophosphate (IMP) under the temperature so as to germinate the Bacillus cereus spores and convert the same into vegetative cells, thereby being able to kill the Bacillus cereus spores after germinating the Bacillus cereus spores, which cannot be killed under harsh conditions, and converting the same into vegetative cells. |
