The present invention relates to a method for manufacturing Korean autumn olive chocolate for proving nitrite and DPPD radical elimination ability while containing a large quantity of phenol compounds and flavonoid by extracting active ingredients contained in Korean autumn olive. The method comprises the following steps: a) producing Korean autumn olive powder produced by freeze-drying and crushing Korean autumn olives, or producing an extract from the Korean autumn olives by using a compression method; b) producing a chocolate melting solution by tempering solid chocolate; c) producing a first mixture by mixing the powder or the extract of the Korean autumn olives with the chocolate meting solution; d) producing a second mixture by selecting at least one from a group consisting of pine nuts, walnuts, and peanuts, adding the same to the first mixture, and mixing the first mixture including the added materials; e) making a specific shape of chocolate cells with the chocolate meting solution; f) forming a chocolate-mixture layer by pouring the second mixture into the chocolate cell and hardening the second mixture; g) forming a chocolate layer by pouring the chocolate meting solution on the chocolate-mixture layer and hardening the chocolate melting solution; h) forming a coating layer by coating all or a part of the surface of the chocolate layer with an edible coating agent; and i) cooling the chocolate having the coating layer formed thereon. |
