The present invention relates to a composition for preventing the formation of a biofilm of microorganisms containing an enzyme-treated extract obtained from a licorice extract as an active ingredient. More specifically, the present invention relates to a method for producing a licorice extract, in which a solvent extract of licorice is treated by an enzyme; and a composition for preventing the formation of a biofilm of a pathogenetic strain containing an enzyme-treated licorice extract produced through the method. According to a composition containing an enzyme-treated licorice extract of the present invention, the growth of Streptococcus mutans, Xanthomonas oryzae, or Yersinia enterocolitica is intactly maintained, and the formation of a biofilm is controlled, so the composition has effects in preventing and treating diseases of the oral cavity such as dental caries and paradentitis, controlling rice plant blight, and preventing and treating enteritis. |
