The invention relates to a method for preparing a brewed beverage, in particular a beer, comprising an aqueous process for isomerization of alpha-acids from an alpha-acids containing matter, separate from the wort boiling in the brew kettle, using one type or more than one type of complexes of metal cations and chelating agents, thereby preparing an aqueous mixture comprising iso-alpha-acids. The invention further relates to said method further comprising the addition of said aqueous mixture, optionally further processed, comprising iso-alpha-acids during the brewing process, in particular to the (unfermented) wort. |
