PROBLEM TO BE SOLVED: To provide a stable core-shell structure containing an easy crystalline compound in a core part wherein the problem that the stable core-shell structure cannot be produced due to the growth of the easy crystalline compound when employing a conventionally widely used shell part construction in order to actually produce a designed core-shell structure consisting of the core part containing an easy crystalline compound and the shell part is solved.SOLUTION: The invention provides a core-shell structure comprising a core part and a shell part, wherein the core part contains an easy crystalline compound and the shell part contains a surfactant with a melting point of -40°C or more at an amount of 5-100 parts by weight to 1 part by weight of the easy crystalline compound, and wherein the surfactant is sucrose fatty acid ester consisting of sucrose and saturated and/or unsaturated monovalent fatty acid of C8-30.SELECTED DRAWING: None
