PROBLEM TO BE SOLVED: To provide a bee larva-containing food composition in which the allergen amount is efficiently reduced; and a production method thereof.SOLUTION: Provided are a molecular weight reduced bee larva-containing food composition produced by proteolysis enzyme treating a bee larva or a processed product thereof, the food composition, in respect of a gel filtration chromatography analysis of the produced molecular weight reduced bee larva, being characterized in that the peak area of the high molecule having a molecular weight of 12,000 or more is 1% or less of the total peak area; and a production method of the molecular weight reduced bee larva-containing food composition, characterized in treating the bee larva or the processed product thereof with an acid protease and a neutral protease.SELECTED DRAWING: Figure 1-1 |
