The present invention relates to a method for making tree sap vinegar which is decomposed tree sap. A traditional pot has to be discarded after the collection of tree sap without being used again. By using a crucible, the present invention provides advantages of replacing the crucible once per year, removing the necessity for coating yellow soil, and diversifying trees to obtain sap and vinegar into trees including a lacquer tree, oak, Korean Dendropanax, a mulberry tree, Cudrania tricuspidata, Acanthopanax sessiliflorus, Cornus walteri, Greyblue spicebush, an apple tree (including hawthorn), a plum tree, a peach tree, a sun tree, kalopanax, birch, Populus albaglandulosa (including a poplar tree), bamboo (including Northern bamboo), bridal wreath (including a Retusa fringe tree), and mono maple (including general maple), since collection can be terminated by dismantlement the crucible when the sap is not extracted any longer. Also, a problem to collect the sap with the predetermined thickness of the tree can be solved by collecting the sap from thin and non-uniform trees. The method comprises: extracting sap from trees and containing the sap in a pot; leaving the pot for 3 to 5 days in the nature; covering the upper portion of the pot with Korean paper and leaving the pot for 15 days in shade; and fermenting the sap for 3 to 6 months (90 to 180 days) by covering a lid on the pot and burying it under the ground. |
