The present invention relates to a composition for increasing the storage stability of a lactic acid bacterium culture including psicose, a method for increasing the storage stability of a lactic acid bacterium culture prepared with lactic acid bacteria and milk by using psicose, and dairy products whose storage stability is improved by psicose. According to the present invention, proper acidity and pH levels are maintained within the lactic acid bacterium culture and dairy products, and the occurrence of water release is prevented from the same.
