The present invention relates to a method of building and launching a ship according to the present invention for building a ship including an overhang part at the stern and bow in a dock and launching the ship by introducing water into the dock. The method of building and launching a ship includes: a preparation step of preparing a keel block on a lower surface of a dock at a position at which a lower horizontal surface is built and preparing a cradle and a mounting support on the bottom of the dock at a position at which the overhang part is built; a mounting step of mounting a plurality of built blocks to upper parts of the keel block, the cradle, and the support; an assembly step of assembling the mounted blocks; a first launching step of floating a ship with the assembled blocks by introducing water into the dock; and a second launching step of moving the ship floated on the water to the outside of the dock.
