PROBLEM TO BE SOLVED: To provide a wheat flour estimation device capable of displaying a farinogram displayed in a chart of orthogonal axes in a circular chart.SOLUTION: A wheat flour estimation device includes: a mixer 4 for mixing a dough prepared by kneading wheat flour thrown into a container 6 with water added by a blade 8; a detection part 14 for detecting a resistance of the dough applied on the blade when the dough is mixed by the mixer; a calculation part 16 for calculating the hard viscosity of the dough based on the resistance of the dough; a display part 18 for displaying a relationship between the mixing time of the dough by the mixer and the hard viscosity of the dough on the coordinate axis of the orthogonal coordinate system in term of the coordinates; a coordinate conversion part 20 for converting the coordinate of the orthogonal coordinate system into the predetermined coordinate of the predetermined coordinate system; an acquisition part 10 for acquiring an intermediate value of the hard viscosity after the predetermined time elapses from a time point in which the hard viscosity reaches the highest value; and an output part 22 for outputting a relationship between the mixing time and the hard viscosity represented by the predetermined coordinate on the coordinate axis of the predetermined coordinate system and the intermediate value acquired by the acquisition part.SELECTED DRAWING: Figure 1
