The present disclosure provides products and methods that provide for the stability of functional amino acids in food matrices. Particularly disclosed is a solid food product comprising: at least one source of solid ingredients selected from a group consisting of: beta-glucans, crisps, rice crisps, rolled oats, fruit pieces, and combinations thereof; and at least one reactive amino acid in a binder that is substantially free from any reducing sugars, wherein the reactive amino acid is selected from beta-alanine and carnosine. Methods for improving the stability of functional amino acids in food matrices are also provided. The products and methods of the present disclosure provide several advantages including, for example, the reduction or avoidance of degradation and browning of the products during processing and storage. |
