Disclosed in one specific embodiment of the present invention is a manufacturing method of estolide having high structural stability, comprising the steps of: a) manufacturing a fatty acid mixture from fats and oils derived from biomass; b) separating the fatty acid mixture into C16 fatty acids and C18 fatty acids; c) converting the C18 fatty acids into C18 or C17 linear inner olefin; and d) manufacturing estolide by performing an estolide reaction of the C16 fatty acids with the C18 or C17 linear inner olefin.
