FIELD: fat and oil industry.SUBSTANCE: invention relates to methods of analysis of quality of soya lecithins and can be used in oil and fat industry. Method of determining content of acetone insoluble substances (phospholipids) in soya lecithin includes sampling of lecithin, preparation of sample by thermal conditioning, placing sample into sensor of pulsed NMR analyser, measurement of signal amplitudes of nuclear-magnetic protons relaxation of third (A) and fourth (A) components of lecithins in standard units and calculating content of acetone insoluble substances (phospholipids) in lecithin. At that, signal amplitudes of nuclear-magnetic proton relaxation of first (A) and second (A) component lecithins is measured in standard units. Further, sum of signals of first (A), second (A), third (A) and fourth (a) component amplitudes (A.) is determined in standard units. Then fraction of amplitudes of signals of third (A) and fourth (A) component is calculated in percentage, as ratio of Avalue to Avalue multiplied by 100, and the ratio of Avalue to Avalue multiplied by 100, and content of acetone insoluble substances (phospholipids) in soya lecithin (F) in percentage is calculated by formula: F= 0.8177(A+A)+2.52.EFFECT: high accuracy and reproducibility of results of determining content of acetone insoluble substances (phospholipids) in soya lecithin.1 cl, 2 ex |
