FIELD: chemistry.SUBSTANCE: invention relates to a method for production of Boza. Method of producing Boza comprises addition to sterilised unfermented and filtered Boza prepared from a mixture of grain crops with addition of sugar, a mixture of Lactobacillus plantarum GE223 and Wiessella confusa GEI13, deposited under number LMG P-26178 in Belgian coordinated collections of microorganisms.EFFECT: invention enables to obtain a product (Boza) having year-round standard microbiological, chemical and sensorial properties, regardless of temperature and ambient flora.13 cl |
