The invention relates to a process for extracting collagen from tilapia skin by enzymatic hydrolysis. The description comprises from the reception of the raw material of tilapia skin, and through to the extraction of collagen. Said extraction is carried out by hydrolysis of the skin using the Bacillus subtilis protease enzyme, wherein said enzyme degrads all of the proteins that do not correspond to collagen. As a result, it is possible to obtain a collagen which is solid, insoluble in water, with a smooth texture and pale-coloured, which has application in the cosmetic, pharmaceutical and food industry, in addition to the biomedical materials and biomaterials field. |
