<P>PROBLEM TO BE SOLVED: To provide an antibacterial substance, mold preventive, food preservative, yeast extract, bactericide, method for inhibiting the proliferation of mold and/or yeast, and method for inhibiting the growth of yeast and/or bacteria. <P>SOLUTION: There are provided an antibacterial substance expressed by formula (1) (wherein, R<SP>1</SP>is a 0-3 alkyl group; R<SP>2</SP>is a 3-9C alkyl group; n is 0 or 1), a volatile antibacterial substance produced by a yeast selected from the group consisting of Candida, Saccharomyces, Pichia, Rhodotorula, Clavispora, and Torulaspora, a mold preventive and a food preservative containing the antibacterial substance, and a method for inhibiting the proliferation of mold and/or yeast using the antibacterial substance or the yeast. <P>COPYRIGHT: (C)2011,JPO&INPIT |
