FIELD: food industry.SUBSTANCE: invention relates to production of kvass. Method comprises preparation of recipe ingredients. Prepared calamus is extracted by liquid carbon dioxide to separate corresponding miscella. Prepared calamus is cut and dried in microwave field to residual humidity of about 20 % at microwave field power providing heating of chicory inside the bits to a temperature of 80-90 °C for at least 1 hour. Then, the calamus is roasted and impregnated with separated miscella with simultaneous pressure increase. Pressure is released down to atmospheric value with simultaneous freezing of chicory. Product is crushed and mashed together with kvass bread and hot water and is three times digested with separation of liquid phase from sediment to produce kvass wort. Then, 25 % of recipe amount of sugar in the form of white syrup are added, the product is fermented with bakery yeast, blended with remaining sugar in form of white syrup and sent to the filling section.EFFECT: method reduces duration of process and increases foam stability of end product.1 cl |
