The present invention discloses functional noodles containing a ginseng leaf extract and a method for producing the same. According to one aspect, the technology disclosed in the present invention has an effect of improving an added value by utilizing ginseng leaf wasted in a process of harvesting ginseng. According to another aspect, the technology disclosed in the present invention has an effect of providing functional noodles having an improved taste as well as improved nutrition by containing the ginseng leaf. According to sill aspect, the technology disclosed in the present invention has an effect of providing a method for producing the functional noodles containing the ginseng leaf, capable of representing the excellent extraction efficiency of the ginseng leaf extract and preventing a sensory attribute from being degraded. The ginseng leaf extract has the content of 0.01-5 wt% based on the total weight of the noodles. |
