The present invention provides an automatic vegetable cutting device enabling easy gap adjustment which is capable of selecting an operation of cutting vegetables in the form of thin slices or thin shreds, which is capable of adjusting thickness of vegetables to be cut as needed, and which enables the vegetables to be cut in the form of thin slices or thin shreds more smoothly as soon as possible through one operation of cutting vegetables. An automatic vegetable cutting device enabling easy gap adjustment according to the present invention includes: an adjusting plate (20) which is formed in a disk shape and includes an insertion port (22) and a cutout part (24), the insertion port (22) having an insertion hole (222) formed in the central side thereof such that a rotary shaft (116) protruded to one side is inserted into the insertion hole (222), and the cutout part (24) being formed on both sides of the insertion port (22); a knife edge unit (30) including an insertion end (32) which is inserted into the insertion port (22) of the adjusting plate (20), and in a central side of which a hole (322) is formed, and a knife edge (34) which is formed on both sides of the insertion end (32) and positioned on the cutout part (24) of the adjusting plate (20) to cut vegetables; a gap adjuster (40) which is positioned between the adjusting plate (20) and the knife edge unit (30) to adjust a gap between other surface of the adjusting plate (20) and the knife edge (34) of the knife edge unit (30); an elastic member (50) having an elastic force positioned between the adjusting plate (20) and the gap adjuster (40); a fastener (60) which is coupled to an end of the rotary shaft (116) to prevent separation of the knife edge unit (30).
