PURPOSE:To prepare an easily eatable mugwort-containing noodle having green color and exhibiting medicinal effect by dissolving mugwort in water and adding the solution to wheat flour. CONSTITUTION:The objective noodle can be prepared by thoroughly agitating a mixture of 60g of mugwort leaf, 500g of water, 20g of salt and 5g of KANSUI (alkaline aqueous solution used in the preparation of Chinese noodle) with a mixer to dissolve the mugwort leaf, adding the product to 1kg of wheat flour, thoroughly kneading into a dumpling, aging the dumpling for about 1hr in a state shielded from air and forming in the form of noodles by conventional method. |
