PROBLEM TO BE SOLVED: To improve preparation of beverage and food products by using an automated extraction machine (on-demand system) that extracts the beverage and, in particular to provide an improved composition for preparing the beverage and food products in the on-demand system (machine).SOLUTION: A composition 10 is used for preparing beverage and food products by the addition of a liquid thereto and comprises one or more beverage or food ingredients 11 and at least one preparation aid 12a. In the composition, the preparation aid 12a comprises a plurality of bodies formed from a substantially insoluble material and the preparation aid 12a is selected to have a predetermined effect on the interaction between the liquid and the composition. The bodies have a diameter in the range of 0.1 mm to 200 mm, and preferably in the range of 1 to 20 mm or in the range of 100 to 200 mm.SELECTED DRAWING: Figure 1
