摘要 The present invention relates to a preparation method of water dropwort wine. According to the present invention, the preparation method comprises the steps of: (A) washing water dropwort, removing moisture from the water dropwort, and adding an amount of sugar equal to the amount of water dropwort and fermenting the mixture for three to five months; (B) preparing a water dropwort sugared extract having 55 to 60 in Brix scale by filtering the mixture obtained from step (A) and removing debris; (C) adjusting the water dropwort sugared extract to have 20 to 25 in Brix scale; (D) inoculating 0.01 to 1 wt% of an enzyme to the water dropwort sugared extract based on the total weight of the water dropwort sugared extract after sweetness adjustment and conducting alcohol fermentation at 25 to 30°C to prepare water dropwort wine having 12 to 15% of alcohol concentration; and (E) seasoning the wine by adding an acidulant and a sweetener and fermenting the mixture at a low temperature from 3 to 6°C for one to two months. The water dropwort wine according to the present invention has excellent flavor of original water dropwort.
