PROBLEM TO BE SOLVED: To provide a welsh onion family vegetable sauce in which not only aroma that is specific in a heated welsh onion family vegetable is excellent, but also the aroma that is specific in the heated welsh onion family vegetable is harmonized with the flavor of the whole sauce.SOLUTION: A production method of a welsh onion family vegetable sauce is such that heat treatment at 60-95°C is performed to a mixed liquor that includes the welsh onion family vegetable, a xanthan gum and a virgin olive oil in an emulsion state of an oil-in-water type, and then further a freezing thaw treatment is performed. |
