PROBLEM TO BE SOLVED: To discover novel utilization methods of soybean plant as an agricultural waste conventionally having no application.SOLUTION: There is provided a soybean derived sweetener having carbohydrate extracted from soybean plants of 50% or more by dry weight, total amount of glucose, fructose and sucrose of 30 to 80% and sugar alcohol of 20 to 60%. There is a manufacturing method of the soybean derived sweetener including extracting carbohydrate contained in the soybean plants under hot water of 60°C or more, reducing or completely removing contaminants other than carbohydrate by purification, and then concentrating or drying.SELECTED DRAWING: None |
