PROBLEM TO BE SOLVED: To provide a production method for a reformed sucrose fatty acid ester mixture, and a sucrose fatty acid ester mixture obtained thereby.SOLUTION: The invention provides a production method for a reformed sucrose fatty acid ester mixture characterized by hydrolyzing a starting material containing 1 mass% or more of a sucrose fatty acid ester with a degree of esterification of 3-5, and 0-40 mass% of the sucrose fatty acid ester with a degree of esterification of 6-8 against the total sucrose fatty acid ester under the presence of lipase which does not show 1,3-specificity to produce a content ratio of a sucrose di-fatty acid ester in which a fatty acid is bound to the sucrose at positions 4 and 6; and a reformed sucrose fatty acid ester mixture obtained by the method.SELECTED DRAWING: None
