PROBLEM TO BE SOLVED: To provide a method for producing bread, excellently and easily making a hot-water blend substitute in an excellent work environment without using hot water and steam, and easily and securely producing bread having an excellent characteristic of the hot-water blend.SOLUTION: A method for producing bread includes an electric heated dough making step of making swollen and gelatinized dough by mixing wheat flour, water and an electrolyte to make a raw material mixture having an electric heating property; putting the raw material mixture into an apparatus having an electric heating function, electric heating so as to put the material mixture in a set temperature range of 50-95°C, and keeping a temperature in the set temperature range after the product reaches a temperature in the set temperature range. The method for producing bread includes using the electric heated dough produced in the electric heated dough making step, as part of final bread dough.SELECTED DRAWING: Figure 1 |
