The present invention relates to a method of producing a red pepper paste through complex processes of micro-wave heating and heat-sterilizing. According to the red pepper paste produced in the method of the present invention, a processed red pepper paste can be produced with an improved sterilization effect when compared with a conventional red pepper paste made by only a heat-sterilizing process. In addition, when complex sterilization processes are used, heating time can be reduced, so that productivity can be improved, and costs can be saved. The change of quality in the color, flavor, and texture of foods can be minimized due to short heating, so that a high-quality red pepper paste can be produced. |
