The present invention relates to a method for manufacturing aglycone converted from glycoside and, more specifically, to a method for manufacturing aglycone from glycoside, by collecting the aglycone accumulated in a cell of a microorganism, after converting the glycoside to an aglycone shape by using a microorganism which produces β-glucosidase. According to the manufacturing method of the present invention, provided is the microorganism for manufacturing the aglycone at high concentrations.
