摘要 The present invention relates to a sea tangle extract to add to a food and a preparation method thereof and, more specifically, relates to the preparation method for the sea tangle extract, comprising: a step of drying sea tangles under a natural condition; a step of grinding the dried sea tangles coarsely in a size of 1-10 mesh; a step of roasting the ground sea tangles to remove strange odors therefrom; a step of extracting extracts by ethanol from the roasted sea tangles; a step of filtering the extracts to proceed a separation of residues from the extracts; a step of adding water into the residue and crushing by a homogenizer and an ultrasonic crusher; a step of extracting extracts from the crushed residue at a high pressure of 3,000-6,000 bar and at a low temperature of 10-50°C for 5-60 minutes; a step of obtaining extracted water by filtering the extract with high pressure and the low temperature; a step of mixing the water extracts and the ethanol extract; and a step of concentrating the mixture. According to the present invention, the sea tangle extract has less odors and renders palatability due to an increase in extraction efficiency, and prevents the ingredients from being destroyed by heat. Furthermore, in the sea tangle obtained in accordance with the method of the present invention, ethanol extracts and water extracts are extracted such that the sea tangle contains both a lipid-soluble ingredients and water-soluble ingredients, and has an effect to enhance a preference due to a proper mixing ratio.
