The present invention relates to a method of producing fermented food which helps in preventing various illnesses and promotes health, and more specifically, to a manufacturing method for a sugar-free fermented concentrate, wherein the fermented concentrate is prepared with a balsamic apple extract as a main ingredient, and by blending a fermentation starter and water-soluble calcium thereto. The fermented concentrate does not contain sugary ingredients at all, and thus can be safely ingested by patients with diabetes or high blood pressure. |
