PROBLEM TO BE SOLVED: To sufficiently extract an active ingredient from a soup raw material at short time, without generating a large amount of scum, without releasing a flavor, and lowering temperature of a soup stock which is completed, in extraction of the soup stock.SOLUTION: Inside of an extraction tank 101 for storing supplied hot water HW is partitioned into upper and lower parts by a set part 102 on which, a soup raw material dm (dm1) is mounted, and allowing free circulation of the hot water HW, then, a circulation pump P1 which is interposed on a contact path 105 communicating a positive pressure chamber 103 on the set part 102, and a negative pressure chamber 104 under the set part 102, is actuated for returning and circulating the hot water HW sucked from the negative pressure chamber 104 to the positive pressure chamber 103, thereby the hot water HW passes the soup raw material dm (dm1) on the set part 102 many times. At the time, the temperature of the hot water HW stored in the extraction tank 101 is maintained to predetermined temperature which does not reach boiling.SELECTED DRAWING: Figure 1 |
