摘要 PROBLEM TO BE SOLVED: To provide a meat quality improver capable of making a soft and good mouth melting meat product even with using meat, wild animal meat or fish having hard meat quality.SOLUTION: The meat quality improver contains (A) a meat quality improver containing carbamide as an essential component, preferably further (B) organic acid or organic acid salt or (C) meat quality improver containing potassium. More preferably lactic acid is used as the (B) organic acid.
