PROBLEM TO BE SOLVED: To provide a method for producing salt-free pickled plums, and produced salt-free pickled plums.SOLUTION: Salt-free pickled plums are produced by pickling for a prescribed period fruits of raw plums in a pickling liquid obtained by adding sugar to vinegar at a prescribed ratio, and taking out the products followed by drying. The pickled plums have both original effect of pickled plums and effect owing to being salt free. Furthermore, the salt-free pickled plums are added with mumefural effect and garlic effect by steaming plum fruits so as to extract mumefural followed by mixing with a pickling liquid as vinegar containing sugar, and further steaming garlic fruits so as to extract the essence followed by pickling in a pickling liquid.SELECTED DRAWING: None |
