PROBLEM TO BE SOLVED: To provide a garlic food product causing no substrate-enzyme reaction between alliin and alliinase in the stomach, further producing allicin as the important functional component of garlic in the body, particularly, in the enteron, capable of effectively taking them, and free from the risks of reversion flavor and foul breath.SOLUTION: Provided is a garlic food product in which enzyme alliinase is inactivated, and also comprising alliin-including garlic extractive powder (SP) and enzyme alliinase-including lyophilized garlic powder (FD).Preferably, the garlic food product is made into intestine-soluble.SELECTED DRAWING: None |
