PROBLEM TO BE SOLVED: To provide a novel canned coffee beverage in which crema-like foam is generated as in espresso coffee freshly brewed with an espresso machine and put in a demitasse cup, and flavor specific to rich-flavor espresso coffee is not spoiled, in spite of being put in a negative-pressure sealed can container.SOLUTION: A canned coffee beverage is characterized in that mixed liquid containing coffee extract liquid extracted via pressure extraction and at least fermented cellulose and quillai extract, is charged in a negative-pressure sealed can container having reseal characteristics, and further is subjected to retort sterilization, crema-like foam is generated due to the action of the fermented cellulose and the quillai extract, and the foam can be retained for a long time. As a result, feeling on the tongue (smoothness) owing to the foam is added in addition to bitterness and sourness inherent in constituents of the espresso coffee, so that the bitterness and the sourness are reduced and the flavor of the canned coffee beverage is made favorable as a favorite beverage.SELECTED DRAWING: None |
