摘要 The present invention relates to a method for PRODUCTION OF wooden chips used in the food industry for smoking of meat, fish, sausages, smoked processed cheese and other smoked products, as well as in the production of high-and low-alcoholic beverages. The beech wooden chips produced by this method ensure quality smoking of the meat products and give the smoked product a specific and fine flavour. The oak chips imitates aging of the beverages in a barrel and improves the quality of natural taste and flavour, enhancing the characteristics of the grape or the fruit. Thus, the oak wooden chips add extra flavour and taste to the beverages. The method includes prior preparation and cutting of the logs, heat-processing in water steam chamber, kiln-drying, longitudinal cutting along the pore of the wood into small particles to the respective sizes and de-dusting of the crushed particles in a de-dusting facility. The production of beech chips includes passing through a sieve for sorting of the different grades, and then packaging of the chips per grades. The production of oak chips includes additional heat treatment of the wooden particles, such as baking in thermal facility under certain conditions.
