摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing a candy, capable of easily producing a hard candy exhibiting a good brittleness on teeth and hardly sticking to the teeth, even having &ge;50% mixing ratio of fructose. <P>SOLUTION: This method for producing the candy is provided by having a first raw material consisting of fructose and a second raw material containing at least one among anhydrous maltose, hydrated maltose, sucrose, palatinit, lactulose and raffinose, and comprising a step of heating/melting the candy raw material containing &ge;50 wt.% first raw material ratio at a temperature between the highest temperature capable of avoiding bitterness generation and the lowest limit of heating temperature necessary for obtaining a good texture, and a step of forming the molten candy raw material to a prescribed shape and cooling. <P>COPYRIGHT: (C)2013,JPO&INPIT
