The present invention relates to a method for manufacturing instant food of cockle meat using a Japanese apricot extract and agave syrup, wherein the method removes a fishy smell unique to cockle meat and adds a flavor thereto to allow a user to directly consume instant food of cockle meat as a snack, use the instant food as a side dish for an alcoholic beverage, and add the instant food to other dishes for cooking. The method for manufacturing instant food of cockle meat using a Japanese apricot extract and agave syrup comprises: a) a step of washing collected cockles, boiling the cockles to discard shells and acquire cockle meat, and then washing the acquired cockle meat; b) a step of drying the washed cockle meat until a water content of the cockle meat is maintained at 30-50%; c) a step of mixing 45-55 wt% of fermented liquid, prepared by mixing 45-55 wt% of sugar and 45-55 wt% of Japanese apricots and fermenting the same, and 45-55 wt% of water to prepare a Japanese apricot water solution; d) a step of mixing 50-90 wt% of the Japanese apricot water solution and 10-50 wt% of agave syrup to prepare mixed liquid; e) a step of immersing the dried cockle meat of step b) in the mixed liquid, and fermenting the cockle meat in the mixed liquid; and f) a step of removing the fermented cockle meat from the mixed liquid, and drying the fermented cockle meat until a water content of the fermented cockle meat is maintained at 30-50%. |
