Provided is a method of discriminating meat. According to the present invention, the method of discriminating meat comprises the following steps: analyzing a protein included in beef stock leaked out from the meat; and as a result of analyzing the protein, if the protein included in the beef stock is a protein included in a first group, determining the meat as frozen-thawed meat, and if the protein included in the beef stock is a protein included in a second group, determining the meat as chilled meat. According to the method, the frozen-thawed meat and the chilled meat are easily discriminated. |
