摘要 The present invention provides a method for producing rice with a reduced glycemic index (GI) and a manufacturing system used for the same. The method for producing rice with a reduced GI includes the following steps: (a) inserting rice in a steaming chamber having an agitation means and a high pressure steam spraying nozzle; (b) reducing pressure inside of the steaming chamber to 500-700 mmHg; (c) preheating the steaming chamber by providing high pressure steam to the steaming chamber; (d) spraying high pressure steam to maintain the inside temperature of the steaming chamber to be 100-135°C and the inside pressure to be 1-1.7 kg/cm^2, and stirring and steaming the rice for 15-23 minutes; (e) post-aging the rice for 5-20 minutes after stopping the supply of high pressure steam and stirring the rice; (f) transferring the post-aged rice to a dryer and drying the rice to have a moisture content of 10-14 wt%; and (g) removing the bran from the rice by milling the dried rice. According to the present invention, the GI of the rice can be adjusted to be 50 or lower.
