FIELD: food industry.SUBSTANCE: invention relates to production of kvass wort concentrate. Recipe ingredients are prepared; scorzonera is cut, dried in microwave field till residual humidity about 20% and roasted. While green rye malt, rye flour and scorzonera are mashed with drinking water and amylolytic and cytolytic enzymes, saccharified and boiled. Phases are separated and extraction of thick part with water with further separation of phases is conducted. Separated liquid phases are mixed and concentrated under vacuum until dry substances content is 68-72% to produce target product.EFFECT: method allows to produce kvass wort concentrate with stable colour index and accelerated process of fermentation during subsequent production of kvass.1 cl |
