PROBLEM TO BE SOLVED: To provide a dehydrogenation system and an operating method of the dehydrogenation system which are capable of controlling conversion ratio of an organic hydride by simpler configuration or control.SOLUTION: A control part 23 controls at least one of a supply amount of materials to be supplied to a dehydrogenation reactor 30, a supply amount of heat to be supplied to the dehydrogenation reactor 30, and reaction pressure of dehydrogenation reaction in the dehydrogenation reactor 30 on the basis of the outlet temperature of a dehydrogenation reactant detected by a detection part 25. Because the outlet temperature of the dehydrogenation reactant and the conversion ratio of an organic hydride have strong correlation, the control part 23 can easily grasp the state of the conversion ratio on the basis of the outlet temperature detected by the detection part 25. The control part 23 can consequently adjust the conversion ratio by controlling the supply amount or the like of materials to be supplied to the dehydrogenation reactor 30.SELECTED DRAWING: Figure 2
